Savory Kale Chips: If you’re craving for something savory and crunchy, air-fry or bake kale. I like to toss mine in a dash of minced garlic, crushed red pepper, olive oil, and salt before I bake.
Low fat popcorn. Boom chicka or Skinny pop are two amazing brands. Popcorn can be a great alternative to chips and other high carb snacks and also really filling. A little secret. A friend of mine gave me this amazing pickled mango pepper paste from Prya. Here’s what I do - take a half a teaspoon of the paste and 2 tablespoons of butter. Microwave it for about 10 seconds. Then toss your popcorn in. OMG - so delicious. I usually have it in the evening with my club soda and watch a movie!
Celery Sticks with Almond Butter. You just can’t go wrong with celery sticks for that crunch. You can top with almond butter or also with hummus. I also love a little low fat cream cheese on my celery and I top with savory onion straws.
Peppers with Hummus. Speaking of hummus, we love sliced bell peppers with hummus. Try to switch it up and try hummus flavors. My personal favorite is red pepper hummus. It’s great if you slice your peppers in long slivers so you can savor each one.
Zucchini Chips: Slice up zucchini, season and bake! Another simple and easy snack. I love zucchini chips - to me, it feels hearty and I still get that crunch, but not the carbs from regular chips!
Vegetable Soup. We love a nice warm soup at the end of the night. Load up your favorite veggies and make it savory and delicious. Or try a fiesta flavored veggie soup with corn, black beans and peppers topped with a little low fat sour cream. My favorite go-to veggie soup is one my daughter put me on to! I add cauliflower, lentils or chick peas, corn, carrots and onions. I sauté the veggies in my favorite seasonings and olive oil: onion powder, garlic powder, salt and red pepper. Then pour over your broth of choice (I love veggie broth). It’s so delicious at the end of the night and it’s really filling too.
Balsamic Vinaigrette Salad topped with lowfat crunchy toppings. I love having a simple salad with romaine lettuce, spinach and sweet peppers topped with balsamic vinaigrette and crunchy onion straws. I love to top my salad with a little crushed pepper and a dash of onion powder for a nice flavor.
Late night veggie omelet. We all love a good breakfast for dinner situation. I love a good veggie omelet with onions, peppers and mushrooms.
Cauliflower Crackers with Dill or Low Fat Veggie Dip. Another great option to substitute for those high carb potato chips. Seasoned cauliflower crackers with a side of low fat deep can crave that urge to have something crunchy.
Hard Boiled Eggs and Avocado. Hard boiled eggs lightly seasoned is always a great go-to snack lightly seasoned with black pepper and salt with a side of avocado slices.
